Founded in 2005 by Pamela and Zane Dobson, PaZa Estate Winery in Auburn, California crafts wine with a hands-off philosophy—minimal sulfites, no filtering or fining, and premium reds aged 2–3 years in barrel. Producing just 600–800 cases annually, they work with Garnacha Blanca, Viognier, Petite Sirah, Albariño, and Sangiovese.
