Once & Future Wine, founded by Joel Peterson in Glen Ellen, represents a return to his original winemaking vision. Crafting small-lot, handcrafted wines from special vineyards including Old Hill Ranch, Dickerson, Belloni, Barricia, and Teldeschi, the winery uses traditional techniques—open-top fermenters, native yeast, and French oak aging—with deep sensitivity to each vineyard's character.
