Theorem Vineyards is a boutique Diamond Mountain estate in Calistoga built on a storied foundation—literally. Owners Kisha and Jason Itkin restored the neglected property in 2012, uncovering historic 19th-century buildings originally constructed by Dr. Richard Beverly Cole in 1880. Winemaker Andy Jones crafts single-vineyard, single-varietal wines from 94 acres across Diamond Mountain and Moon Mountain, earning high scores from Wine Advocate and recognition for their Howell Mountain Cabernet Sauvignon.
